Does anyone know of a way to add/remove file types located in the menu?

A simple way would be to use TweakUI; you can change all this in the Template section. Download TweakUI here

If you want to delete one of those this regkey might work:
HKEY_CURRENT_USER\Software\Microsoft\Windows\CurrentVersion\Explorer\Discardable\PostSetup\ShellNew\
