I just got Messenger Live 8.0  and i checked on the site to see if there was an update for it.  I found that there was one for the last one (7.5), and it said that it was required for the next update.  If i install it with 8.0 will it screw it up at all or will it just bring up my version # of plus

Nothing will happen if you install an update for 7.5 because you don't have it! You will likely get an error message. You don't need to install any updates for 8.0 unless it says so. And Messenger Plus! is not even involed because it's not compatible with Windows Live Messenger 8.0 yet.

what im asking is.. Do I really need to install the new update, because it says that i won't be able to get the update for 8.0 unless i have this.  And if i do have to install it, will it mess it up at all or will it just change the version number, and not do anything.

You don't really need to unless you want to,! This update is required for anybody who will want to continue to use the old Messenger Plus! and the new one, side by side, on the same system (Messenger Plus! Live will only be compatible with Windows Live Messenger, you will still need Messenger Plus! 3 if you use Windows Messenger for example).
