It always showed the last conversation I had with my contact, but now I can not seem to find how to set it. Can anyone tell me how?

Make sure you have both "Automatically keep a log of my conversations" and "Show my last conversation.." options checked under Tools > Options > Messages > "Message History" sub heading.
