...lets say that you have your status set as appear offline but you have that "What I'm listening to" function enabled, can people actually see the songs that you're playing? I know it might be a stupid question but I've been wondering lately lol

No, they can't..it will only show if you are "online" (online, away, busy etc.).

Easy way to test this: add yourself to your own contactlist, then play a song and see if it shows in contactlist
