Yes, you can add your own custom emoticons and your contacts will also see these (See the menu "Tools > Create emoticons...").

If you actualy mean editing out the default ones, then it is possible but this requires you to edit the MSN Messenger file itself, which is illegal to do so. Also, on top of that, your contacts will not see your altered emoticons, but rather see the normal default ones; in other words, only you will see the changed emoticons.
