I don't seem to be able to choose to display my contacts emails in their respective buttons rather than their nick names (as I can in the contact list). Is it just that I simply haven't found this option or is it so that it's not yet possible?

This isn't possible (yet), sorry.

That will be possible in version 4.10 using a registry key.

As stated Messenger Plus! 4.10 can do this, and it is available since a few hours. Download it here:

After you have installed that new version (don't worry, none of your preferences will be removed or reset), you need to add a special registry key in order to see your contact's email addresses instead of their names:

1) Open your registry editor: click on Start > Run > Regedit
2) Navigate to: HKEY_CURRENT_USER\Software\Patchou\Messenger Plus! Live\your@email.com\Preferences
3) Add a new registry value in the right plane: right click > New > DWORD value
4) The name of the new value must be "TabDispEmails"
5) Set its value to "1"

The colors of the tabs follow the skin color of Messenger. Though you can change the color of the flashing for tabs with Messenger Plus! 4.10 like so:

1) Open your registry editor: click on Start > Run > Regedit
2) Navigate to: HKEY_CURRENT_USER\Software\Patchou\Messenger Plus! Live\your@email.com\Preferences
3) Add a new registry value in the right plane: right click > New > DWORD value
4) The name of the new value must be "TabChatFlashColor"
5) Set its value to the COLORREF value you whish.

A COLORREF value is the hexadecimal representation of an RGB in the form 0xRRGGBB, where RR is the hexadecimal value for the red component, GG for the green and BB for blue.
eg: white is: FFFFFF
      black is: 000000
      gray is: C0C0C0
      red is: FF0000
      blue is: 0000FF
      yellow is: FFFF00
      etc

PS: note that on the registry help page on the Plus! site there is a typo: the second "FloatChatFlashColor" should actually be "TabChatFlashColor" edit:fixed
