Not sure about this, but since YouTube videos are shared the same way as photos, you could turn off automatically accepting photo sharing requests.  Note that if the other contact sends you anything else (like pasted pictures), you'd have to manually accept the request (clicking the accept option, or pressing Alt+C).  There doesn't seem to be a separate option for video shares...
