To color the "says" it is just the same method described by marissa, only instead of the command
/nick, you need to use the command
/nick2.
eg:
/nick2 <ctrl+k><some colornumber>my colored nick<ctrl+k><some colornumber>

That's the only method there is. Also the ColorNick plugin does nothing more then that.
