Like, I have sorted some into groups for remembering them better.
Family, Friends, School, Ex, Internet, etc...
What is the use of having them inside a group (eg: school) if you don't want them visible in the first place? If you don't want to see them then either move them to a seperate group like DragonX suggested or remove them from your contact list (but still allow them in your allow list)...
And to remember contacts you can also use Messenger Plus!'s custom name feature...

I really can't see what the problem is with that. If you don't want a specific group to take space then minimize it...
And if you wanna "hide" only offline contacts then simply select/enable
Contacts > Sort Contacts By > Group Offline contacts together and minimize that group...
