Arthur still had the catalyst in him.. until he died (the glow went out of him). Even if he's brought back miraculously, the catalyst is lost forever... they just have the bucket now. Unless somehow Hiro gets it in the past.. but he's powerless so idk.
... and I don't think Sylar's change was too sudden/unreasonable. He was trying to contain his power, and he obviously wasn't able to do it for long. A more plausible explanation is that he was just horny, and he didn't want to rape a dead body. So he just used Elle and then disposed of her

Nathan's was kinda strange, but it's not like he's completely submissive to his father. He believes he's in control.
