Chat Logging exists both in Windows Live Messenger and Messenger Plus! Live

WLM - Tools -> Options -> Messages



MP!L - http://www.msgpluslive.net/download/ < If you do not have it installed yet

Plus -> Preferences and Options -> Conversations -> "Chat Logging"

Both of those ways would require her to be logged onto WLM so you could enable it (for either WLM's built in Chat Logging or MP!Ls chat logging)

Just set it to a folder, and read them when you'd like

I'd say Chat Logging would be the best for what you want
