By 'record', I'm guessing chat logs? you can 'unlock' or decrypt current logs permanently with the information here:
Encrypting, decrypting etc. of Plus! chatlogs

As for stopping the encryption,
Plus Preferences > Conversations > Logs Encryption > uncheck the box to protect logs
