How do I get my name to show up in the color I choose, on someone elses contact list

Just by simply making your name colourful, if you dont know how then simple type /nick in a conversation press CTRL+K, choose your colour and then type your nick name. It'll only show up in colour if your contact has that feature enabled. Plus> Preferences> Contact list > General Options. "Display formatting attributes in the contact list"
If they dont have this option selected then your name will come out in the original black default font.

When I tried to enter /nick then hit ctrl k then typed name hit enter and it keeps telling me that the command isn't recognised

Are you sure you're putting a space after /nick?

Your instructions didn't include putting in a space, Marissa. Might want to fix that .
