rite click on the contact > "messenger plus! extra" > set come back message...

My come-back message option is grayed out... how can I fix that?

You can't send come-back messages for online people. The purpose of a come-back message is to send them a message as soon as the sign into MSN. You can only set those for people that appear to be offline at your contactlist, because the feature won't make sense for online people.
