Which one of these is better:

and does anyone know any good photoshop tutorials other than www.good-tutorials.com (PS: im not new at photoshop or anything i just learn a lil bit more from tutorials, i\ve been using it for awhile)

I'd say the first one the other two are far too dark.

background texture of the first one, with a lighter foreground text would be nice IMO
