ON THE EVENT LOG, AND ON THE CONTACT INFORMATION, DOESN'T LOG THE NICK CHANGES ...

This is a known bug. There should be a fix for it in the next version (27th September).

It's actually a known bug in MSN Messenger 7.5. Patchou has coded a workaround for Plus! 3.60 (as I have done for Phoenix 2.01), which does detect name changes.
