Just a quick question if I may....
Now, the decrypted txt files you can see when you type the password obviously can be altered and saved. But the encrypted chat logs themselves I'm guessing and hoping cannot be edited?

Nope, they can not be altered. Open up an encrypted log...delete some lines and save. Now close it and reopen...you will see the lines you deleted are still there.

It saves the decrypted log in your temporary files folder and then opens.
