will appearing offline trigger me being shown as mobile?

I doubt it, seeing as your still "on" the MSN servers, as far as I know the only time when you're status is set to mobile is when you aren't online at all, so when you are literally offline.

I think it will. Otherwise people are able to tell if you're just appearing offline.
