RE: Start up
I had a similar problem a while ago, i had xp Home and Pro installed and wanted to get rid of one but managed to sort it. I can't really remember how i did it now but i think that i removed the partition that the second OS was saved onto.

RE: Start up
go to star> my computer> (right click) properties> advance tab> and on the start up and recovery part click setting
choose the one the that u dont need be bvery carful you dont want to delete the one that u actually need!

this may be more clear:
   1. First, open a command prompt.  Click start, then run and enter cmd, then click ok.
   2. Rnter the following command to see the boot info "bootcfg /query"
(this will display your boot settings, what you will need is to take note of which boot entry ID you wish to delete.)
   3. Then type the following "bootcfg /delete /id 2
(In this case we have chosen to delete the second OS entry which we noted down earlier from the bootcfg query command.)
   4. Then once you restart you won't get the option to pick what OS you want to load.

RE: Start up
BOOTCFG can only be launched from the Repair Console

just delete the os you no longer have from the boot.ini
