Apple says that you must use iTunes (there are some hacks to not use iTunes). You can use music that's not from ITMS, but you must import it into iTunes, but it rejects most files (mp3s are fine (for now 
)). iTunes also likes crashing.

You can use Winamp with the iPod Plugin. Also iTunes accepts most file formats. Though it will convert them to AAC or MP3 depending on your settings.
It's also ANNOYING as all heck to have to unload and load new music onto my mp3 player every time i want a new playlist.
