You can't split it into the same subdirs when you group your chat logs by email. Where need it to be saved in that case? in the subdir of contact x, in the subdir of contact y, or in the subdir of contact z? etc. There would be no possible logic into knowing where to save/split it to.
However, when you group your chat logs by date, the event log can indeed be split into the subdirs and each time a new date subdir is created a new event log will be created too:
Plus! > Preferences > Messenger > Event Logging > By date, in the chat log's current directory
