Okay, because it is running OS 9.1 then it'll be a PowerPC based processor.
First of all, because it is running an older version of Mac OS (before Mac OS X was introduced - v10) you'll want to check if it is actually capable (specifications) of running OS X. You'll need a G3 processor
at least.

Now - in regards to Linux you can't use standard x86 builds because they're for Intel processors. You need the ppc builds which are for PowerPC processors.
Luckily Ubuntu Linux has these:

What you're looking for is "Mac (PowerPC) desktop CD" and once again it requires a G3 or greater processor.
