O.P. General notification on exit
I know that there is a method to notify you if an individual leaves, but you have to set that up individually for each contact. Is there any way to play a sound or notify when a contact leaves (like on AIM)?

No, there isn't...

At best you can select a sign-out sound for contactgroups (Plus > Preferences > Notifications > Sounds), but not for all at the same time...
