The only way to know if they've deleted them is to ask you.....there is no software that can detect it as that information is no longer updating on the servers.

Having them in the lists on your Privacy page doesn't change anything really, depending on your security settings.  Removing them from the contact list should be sufficient.

Your MSN has no way of knowing whether someone has deleted you or not
