iBoy is made for the minis, but the developer is either not working on it or having trouble with the scaling issue, and I feel that someone in the community can do it http://ipodlinux.org/GB_Emulator
That is the link to iBoy. Its currently supported on 4G iPods and 1G minis (what I have got)
