The problem is that it's a Plus! Live feature. And, as noted in the title, this is a MSN Messenger 7.5 request. 
oh, i thought it was in 3.xx, i could swear using it in 3.xx, oh well. Doesn't plus live work with MSN 7.5? Most of them work on previous versions...
Plus! Live won't work with MSN 7.5, but in this case it doesn't matter as you are correct in saying that this feature was in fact in Plus! 3.
It can be turned on in two ways:
- Conversation window > Plus! menu > Override contacts font
- Main window > Plus! menu > Preferences > Instant Message > General Options > Override contacts font
This may not be the exact text as I cant be bothered going back to MSN 7.5 and Plus! 3 to check
