I've done some more searching and this article seems to be a way to fix your problem.

I did not read over it fully, but it outlines deleting or moving the ACTUAL iTunes library file and then proceeding to edit the .xml version. iTunes will then reconstruct it's actual library from the .xml version, which is apparently a backup.
