I've edited my previous post a bit. The issue isn't update time so it seems (with using WLM 8.5 it is instant), but the issue is how are your contacts suppose to 'subscribe' to these changes in the 'Edit Contact' panel. For blog entries and so on, this is done on this page:

So your contacts need to go to that page and enable the stuff they want to see. And that works sure enough, if something changes they would see it in the 'What's New' area in WLM...
But this doesn't change the settings about what they see in the 'Edit Contact' panel in Windows Live Messenger 2009. That panel isn't updated automatically with the info written in the profile. Only by using WLM 8.5 you can subscribe to this so it seems.
