i was wondering how you become an official BETA tester

Help out on these forums well and long enough and you'll get noticed. When the time has come you'll receive an official invitation by e-mail (or get notified otherwise maybe).

To learn you can read up on these forums and see how the problems ppl have are solved. Then when you come across a post of someone asking for help and you know the answer, answer if it hasn't been solved already. Also read the forumrules and obey them.

roughly how many posts must i do before i become a tester

The number of posts doesn't count. Patchou chooses his beta pesters according to their knowledge about Plus, and they behaviour on the forums. If you help a lot in the forums, and understand all or nearly all of the features of plus, in the future you can become an official tester. However that doesn't happen always, due to several reasons: Patchou doesn't need more testers, he doesn't trust you, etc...

Anyway, don't try to become a beta tester. By asking you won't become one, sorry .

Being a beta tester doesn't mean getting Messenger Plus! faster, it means you have to work, by testing every single option in Messenger Plus! and report bugs to Patchou.

can i still have BETA things such as msn 7.0 and msg plus 3.40.112

Ofcourse you can, download MSN 7 beta where you normally download MSN messenger..it's a public beta now. And plus! beta you can find onhere (rare exeption that plus! is released in betastage).
