Just wondering if it's possible to edit a Quicktext via a command. Or can they only be edited through the config panel?

The only way is via the config panel. However a quicker way may be if you use the /config command > Message Helpers > Quick Texts...

Just for curiosity's sake, I may try hooking into the QuickText window and setting some text, just to see if it works

just use the registry, much much easier and cleaner...
