it will always show you as offline if you block them. They wont be able to see your status at all.
Not sure about the conversation history

No, you cannot find out if someone has blocked you. It was possible but now it is not. Any online block-checkers just want to obtain your password and information. :)

If you deleted your chat history files than you can not recreate them anymore. The chat is only stored in those files, nowhere else. So, deleting them will remove those chats permanently.

You could try to retrieve those files with so called undelete programs (search google) but those chances are extremely slim if you don't do it immediatly, because deleted files will be overwritten with newer existing files.

[OFF TOPIC]

If you see them as anything other than 'Offline', then they haven't blocked you in Messenger.

As for emails, that is indeed another thing. However, if their mailbox is full it is quite possible that you recieve a message back telling you can't send emails anymore. Though, in most cases it should tell you in the email that the returned mail is because of a full mailbox. Also, there are Windows Live Ids (the email you use to sign in to Messenger) which do not have an associated mailbox and thus can not recieve emails at all.
