What about msn messages with multiple smileys? Just count all the smileys individual.

Example:
= mood -2
= mood -1
= mood +1
= mood +2

You could also have multiple categories, so you can log the times specific emoticons will be used. i.e. when someone uses a lot, his avatar could be changed into a shy version. Same for  .
