They interview everyone to make it "fair" I presume and in case you don't choose ones they think you should do or choose ones that you have no hope at doing well at and also to see if you have any career ideas for after sixth form and to make sure you do the right subjects for it if you do. I think its also meant to introduce people to the idea of uni interviews even though the "interview" I just had was pretty much just "well done, that's all ok, see you in september" spread over 1-2 minutes
