Because the pigment in your eye which gives it it's colour would always be the same, no matter how much salt was around.(or any other factor - there is no way to change the pigment other than gene therapy(replacing the DNA strands that code for eye colour) and even that wouldn't give you the option to change at will, it would only be possible to choose a specific colour at the embryotic stage that would then stay with you for life)
Secondly, salt crystals aren't prisms and so would not split up white light into it's full colour spectrum and so would have no effect the the reflected light from the eye. The only thing that could happen due to refraction would be the light coming in or out at a different angle(obviously, as that is the definition of refraction) but that would only change the perspective you see the eye from, ie distance, and size, not colour.
An example of refraction changing the way you perceive something is if you put a coin in the bottom of a tub of water, depending on what angle you look at it, the coin can appear a different size and/or closer or further away then it really is. This is due to the refraction that happens as light a) enters the water and b) leaves.
