Here's a tutorial on how to do the reflection for any photoshop n00bs like me who wondered: http://www.planetphotoshop.com/tutorials/lesa8.html
Getting a slightly paler part on your text is best done by making the shape you want with the pen tool, filling a new layer with that area in white then changing the opacity to around 25-30%.
The rest is all font / colour choice.

I didn't use photoshop. I use Paint Shop Pro 9. For the reflection I just doubled the text fliped it then reversed the gradient and the bottom half.
